SPECIAL VEGETABLES KHICHDI RECIPE
Ingredients
1 Cup Rice Sona Masoori
3/4 Cup Yellow Moong Dal
1 Tablespoon Oil
Dry Spices for Seasoning:
1 Star Anise
2 Bay leaves
3 Cloves
1 inch Cinnamon Stick
2 to 3 Kapok Buds Marathi Moggu
Other Ingredients:
1 Medium Onion finely chopped
3 Green Chilies slit lengthwise
1 Large Tomato diced
1 tsp Ginger Garlic paste
2 Carrots diced
1 medium Potato diced
1/4 Cup Frozen Green Peas
1/4 Cup Frozen Beans
Handful of Mint leaves
Handful Fresh Coriander finely chopped
1/4 tsp Turmeric Powder
1/2 tsp Red Chilli Powder
Salt to taste
4 to 5 Cups Water
Instructions:
Combine Rice and Moong Dal and wash until water runs clear.
Heat Oil in a pressure cooker over medium heat.
Add the dry spices to the oil and sauté till you get a nice aroma.
Immediately add in Onions and green chillies and sauté for 1 minute.
Now add chopped tomatoes and ginger garlic paste.
Sauté and cook for about 2 minutes.
Add rest of the veggies, salt, turmeric powder and Red Chilli Powder, Rice-Dal mixture and mix well.
Now add required water and adjust salt.
Close the pressure cooker and cook for 1 whistle and turn off the heat.
Open the lid once the pressure subsides from the cooker.
Serve hot with any raita, Kadhi or Chaas.
